Globe’s head chef keeps it in the family

It’s a small world. Or at least, it is if you are in the food business. After all, it’s an industry that consists of a huge number of family firms. Indeed, we are one of them and, as such, always appreciate a good bit of interconnectivity.
Take this news from one of our non-executive directors, Toby Hawkins. Toby’s brother, Luke, has just taken over as head chef at The Globe Tavern, situated near the south side of London Bridge. The historic pub, which was built in 1872, adjoins Southwark’s even more historic foodie paradise Borough Market.
So where does Luke get The Globe’s bread from? From around the corner at CyBake user Bread Ahead, of course. All of which is explained on The Borough Market website.
Just the sourdough bread sauce described in this post is enough to guarantee a lunch date at The Globe for this correspondent very soon. Followed swiftly, no doubt, by a couple of the gourmet doughnuts produced by Bread Ahead, which has been running its stores and bakery school at Borough Market since 2013.
