Rebel Bread takes online orders, scales production and smooths deliveries with Cybake

Rebel Bread was established by Zach Martinucci in Denver, Colorado, in 2018.
His bakery specializes in sourdough loaves, ciabatta and baguettes, as well as pastries like croissants, brioche, muffins, cookies, and scones.
It delivers to around one hundred wholesale accounts across the Denver metro area including specialty coffee shops, grocery stores and restaurants.
Rebel Bread also operates a busy baking school, a small retail counter, its own sandwich brand, Gino Panino, and runs a seasonal stall at a local farmers market.
Zach, who studied culinary anthropology at UCLA, worked at a family member’s Bay Area bakery and graduated from the San Francisco Baking Institute before starting Rebel Bread, is also the founder of the Denver Bake Fest.
Before switching to Cybake, his company used another bakery management system.
Zach (pictured above) says: “We were looking for a software with better support. There were entire features we didn’t know how to use on our previous software that we weren’t really able to get training or help with. We knew that by coming to Cybake, we would really get the help we need to fit the software to our bakery and make sure our staff could use it day to day.
“We really value having software that is constantly making improvements and communicating them well and has a support team that’s available for us when questions come up.”
Online orders
Running through the parts of Cybake his bakery relies on, Zach estimates that ninety percent of his wholesale customers now place their orders through the online shop that comes with the software.
He says: “It’s excellent that they can manage it themselves and that we know they are getting the most informed, up-to-date version of what we are offering. We collect all of our orders day to day and run reports for all of our different teams, so the reporting features are really important to us.”
All of Rebel Bread’s recipes and costings are also managed by Cybake.
“We don’t order ingredients through Cybake, but we’re able to print recipes how we want them,” says Zach.
“Some things, we are printing the exact quantity that we need to make that day. Others, we are just storing the recipes in Cybake and then pulling batched recipes one at a time based on the quantity we’re going to make for our own production planning.”
All invoices are generated by Cybake and then sent to Rebel Bread’s Xero accountancy package.
“Then, we have another third-party software called Wholesail Payments that integrates with any of the main accounting software packages,” says Zach.
“Wholesail Payments essentially pushes the invoices to the customers and creates a dashboard where the customer can log in and see their entire accounts payable history with us.”
Picking and deliveries
Rebel Bread uses Cybake to generate its delivery documentation and packing slips and plan all the routes for its delivery contractors’ drivers. Cybake was the delivery contactor’s preferred option, and its drivers use its delivery app on the road.
Zach says: “I know that they like having direct access through the bakery software, and they can help resolve issues before they happen rather than just get a list of stops. There’s less to figure out on their end. Nice.”
Describing his company’s journey from its previous bakery management application to Cybake, Zach concludes: “Software was a limiting factor at times because it was the software paired with every employee having to have an understanding of how things fitted together.
“We picked Cybake hoping that we could scale with it, that we could take on as many new accounts as we want, change our recipes up, and our production. It has fulfilled this promise.”
