Three new Cybakers join the family

The CyBake user family has been joined by three more members: Fisher & Donaldson, The Incredible Bakery Company and Frankonia the Bread House.
Scottish institution Fisher & Donaldson is a fifth-generation bakery founded in 1919. It runs seven shops in Cupar and St. Andrews, Fife, and Dundee. The bakery operates under royal appointment, no doubt partly due to its fudge doughnuts – a local delicacy that has become world-renowned.
The Incredible Bakery Company, based in the village of Warkton, Northamptonshire, is our first dedicated gluten-free operation. The company was born after James Turner and his wife Valeria Mizuno-Turner turned to baking their own food for their son, Leon, who has multiple food allergies (all three pictured, above).
The firm then grew from a family hobby into a flourishing wholesale bakery. It won this year’s Baking Industry Awards’ free-from product of the year for its Incredible Onion Panini.
The Mizuno-Turners worked in the City of London before they moved into bakery, as did Birigit Gunz, founder of Frankonia the Bread House, based in Surbiton in the capital’s south-west.
Birigit, who is originally from Bavaria, spotted a gap in the market for the styles of bread she was brought up on and Frankonia was born as a shop in Wimbledon in 1998. Wholesale demand grew fast and nowadays the business turns out over 3.5 million products a year to some of the most notable restaurants in London and, more recently, throughout the UK.
