Béres Pork Sandwich Shops
Béres Pork Sandwich Shops was founded in the city of Sheffield, Yorkshire, England, in 1961 by Sandor Béres, who came to the UK following the Hungarian Uprising in 1956.
His son, Richard Béres, took over in the 1990s and manages the business with his sisters, Helen, and Catherine. They currently operate 14 shops across the city.
When asked about how Cybake helps them run their business, Richard says: “When you’ve got a lot of products, you need to know what is selling. You need to forecast what you’re going to sell. Take, for example, something simple like gingerbread men. You need to know what was sold and what you are going to sell next week.
“That’s what Cybake does. It looks at the last six weeks of data, gives you an average, and gives you a cover. So, you can say, ‘I’m going to do and sell this many’ and it will give you a cover so that you don’t run out. That’s essentially what it’s doing on every product from for me, from sandwiches, bread, everything.”
Peace of mind
Richard says that Cybake makes life easier: “It takes a headache out of thinking, ‘What am I going to have to make the next day?’. It gives you peace of mind, as well, because it’s doing a stock control. So, basically, is anything being wasted? Is anything go missing? Has the delivery has been accepted?
“Which is a big thing. Even with one or two shops, you will still need to know whether everything is being sold that you are making. You could be making things and yet you’re wasting your time because your people at the shops tell you, ‘Yeah. We’ve been busy with that product; we’ve been really busy.’ But, when you look at it, some stuff is being wasted.
So, you need to know what’s getting sold, what’s being wasted, and you can see it. Cybake gives you that on the screen. It gives you a nice, four-week past, so you can see what’s happened.”
Richard reveals that the famous Sheffield pork sandwiches that are so loved across the city, were initially created by accident:
“My dad trained to be a butcher and I think just got into sandwiches by chance. He took a shop on that had a big wholesale order. Unfortunately, the first week he’d lost that wholesale order. So, he was down to having all this meat there. He was a very good cook, my dad, and then he realized he could turn this spare meat into something quite tasty.”
Perfection
He also explains the how to make the perfect pork sandwich:
“So, there’s a few combinations you’ve got to get right with the bread. Obviously, the bread starts at night, the night bakers bake the bread that that gets sliced. They’re packed to keep it nice for the deliveries. That gets delivered every morning early to the shops. The pork that comes in is cured in tanks, then that is sent out to each shop, and it is roasted at each shop.
“What you have to get right with the pork sandwich is the roasting, the bread, and what we call the ‘meat juices’. The bread gets dipped in and that makes it a nice, tasty sandwich. We make the stuffing from any returns on bread. That’s dried, then seasonings are added and made into stuffing. Crackling – we have to buy half a tonne every week to process to make crackling because there’s just not enough on the actual joint. That, in total, and the apple sauce, combines to make the perfect pork sandwich.”
