Waste control webinar is a must-watch for food-to-go operators

Hosted by Cybake CEO Ali Lyons and industry commentator and consultant Matt Cundrick, “How to conquer your fear of waste: a webinar for food-to-go and in-store bakery operators”, is a half-hour session that was originally held on July 17.

In the webinar Ali, who headed up food divisions at both M&S and Morrisons before joining Cybake, and Matt talk about how P&Ls are squeezed tighter than ever. Raising prices isn’t a viable solution, which leaves operators with limited options for cutting costs. Waste, however, is one area that offers some potential for savings, if managed properly.

One of the key points discussed in the webinar is how an overzealous focus on waste can stifle new product development (NPD). An aversion to waste can lead to a reluctance to innovate, meaning operators stick with familiar products and miss opportunities to offer new and exciting items to their customers.

Ali and Matt share practical advice on how operators can manage waste effectively. The first step is setting waste levels that are appropriate to an operator’s specific market. Each market has its own demands and understanding those is critical to defining realistic waste targets.

Another key takeway from the webinar is that a real waste management strategy starts with proper planning. Ali and Matt emphasize that having clear guidance for store colleagues is essential and how buy-in from employees can significantly improve compliance. They also highlight the importance of using EPOS data to set realistic waste targets

Finally, Ali and Matt explain how optimizing waste levels doesn’t just save money, it also improves product availability. With controlled waste, operators can maintain better stock levels, ensuring customers find what they want when they visit their stores.
