Twin Bears Bakery grows fast with Cybake

Twin Bears Bakery in Frederick, Maryland, USA, has become a cornerstone of its community, supplying fresh, handmade breads to local restaurants, cafes, and grocery stores across the DMV (District of Columbia, Washington, D.C, Maryland, Virginia).

But it all began much more humbly, with a simple experiment at home.

Owner Andrew Roy’s wife discovered stone-ground grains like einkorn, emmer, and rye and began experimenting with sourdough. Inspired by her creativity, Andrew took an interest, picked up a book on sourdough, and started baking himself.

“My first loaves were bad, but I fell in love with the process,” Andrew recalls. “Having access to these incredible grains and learning about natural fermentation really drew me in. From there, I started baking every day.”

Initially, loaves were shared with friends and neighbours. Word of mouth spread, and soon Andrew was fulfilling paid orders, particularly as the COVID-19 pandemic made people more conscious of where their food came from.

“People wanted to know the history who grew the grains, who milled them. We leaned into that storytelling, and it resonated,” he says.

While it has expanded its offerings to include items like a signature brown butter chocolate chip cookie with house-made toffee, the bakery always comes back to what it does do best, bread.

“Our specialty is bread. Everything we do, whether wholesale or retail, is grounded in the quality and craft of our sourdough,” says Andrew.

Expansion

In early 2023, Twin Bears Bakery moved into a historic building in downtown Frederick that was originally constructed as a bakery in 1907, bringing the space back to its roots.

With growth came complexity.

“Like most bakeries, we managed everything on spreadsheets and binders,” Andrew explains. “I’d built formulas over years, and they worked when we were small. But as we grew, adding more customers and recipes, spreadsheets just weren’t cutting it anymore.”

After evaluating options, he discovered Cybake.

“We had the opportunity to walk through a Cybake demo, and we found that not only does this meet our immediate needs, but there was plenty of room for scalability as we grew the business.”

Today, Cybake is central to Twin Bears Bakery’s daily operations.

“Our wholesale customers love the online ordering platform. They can log in, place their orders, and we don’t have to chase emails. On our side, Cybake generates bake sheets, daily totals that our team uses to scale flour and manage production. It’s streamlined everything.”

The biggest impact has been in managing rapid growth.

“What I wasn’t prepared for is just how much Cybake helps you scale,” Andrew says.
